- Often I add various chili peppers or Indonesian sambals.
- .IH "Serves 4"
- .IG "1 lb" "Lo mein noodles" "500 g"
- (or thin whole wheat noodles)
- or thin whole wheat noodles
- .IG "\(14 cup" "sesame oil" "50 ml"
- .IG "\(12 cup" "tamari" "100 ml"
- (wheat-free soy sauce)
- .IG "4" "Scallions,"
- chopped fine.
- .IG "4" "cloves garlic,"
- crushed (4 is enough!)
- .IG "1 Tbsp" "grated fresh ginger" "15 ml"
- (Or more, to taste)
- .IG "dash" "tabasco sauce"
- .IG "2 Tbsp" "tahini" "30 ml"

- Boil noodles until al dente; rinse well in cold water.

- Heat sesame oil and toss noodles in it until throughly coated;
- then add tahini and toss well. Remove from pan and allow to cool.

- Combine other ingredients and toss well with noodles. Refrigerate.

- Serve cold.

- I use Japanese soba for the noodles.

- Sometimes I make this variation:
- put some thin slices of garlic under the skin of a chicken breast
- or two, bake 30 minutes, then tear the meat into small shreds and add to the
- cooked noodles before tossing.
